Chicken Chili

I thought, what with the weather starting to get chillier, I would share one of my favorite cool weather recipes with y’all:

Crock-Pot Chicken Chili


  • 1 can black beans ( rinsed)
  • 1 can corn, undrained
  • 1 can Rotel, undrained
  • 1 package ranch dressing mix
  • 1 tsp cumin
  • 1 Tbsp chili powder
  • 1 tsp onion powder
  • 1 8 oz package light cream cheese
  • 2 chicken breasts
  • 1/4 teaspoon of cayenne pepper
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of pepper
  • 1 cup of diced onion
  • 1 Tablespoon of Olive Oil
  • 2 Garlic cloves minced


  1. In a large skillet – heat oil and cook onions for 8 minutes than add garlic and cook for one minute.
  2. Set your crock-pot to low and add chicken, “cooked” onions and garlic, black beans, corn, rotel, all the seasonings, ranch mix.
  3. Stir
  4. Add cream cheese on top and cover and cook for 6 – 8 hours.
  5. Before serving shred chicken using two forks.
  6. Enjoy

When making this for family, I leave out the cayenne pepper (because my mother is allergic to it) and it is just as delicious.

Autumn is Here!

Happy Friday to all!  Last Monday was the first day of Autumn and here in North Texas we have been blessed with cooler temperatures.  In case you have not already noticed, my favorite season of all is Fall.  I love the sweater weather, football games, general peace that tends to accompany this time of the year.  Just for fun I created a special bucket list for this season:

A Farewell to August

So long August (almost)…  Hello September!  For the month of September I have created a Picture-A-Day challenge.  I will be posting my daily photos on my Instagram and Twitter accounts and I would love for y’all to participate too.  Simply post your picture for each day on Instagram or Twitter accompanied by #OKW.

September is one of my favorite months of the year, it ushers in Autumn, the weather starts thinking about cooling off here in Texas, college football really starts up again (Whoop!), and of course my birthday!  Autumn is my favorite season; something about crisp fallen leaves, cashmere sweaters and boots make me happy.

Another great thing about September is that Jamberry Nails will be releasing their new designs on the first.  As exciting as that is it also means they are retiring several wraps and lacquers (over 125 total).  The last day to purchase the retirees is Sunday, August 31st.
